Ingredients:

  • 2 cup Zucchini
  • 2 tbsp Butter
  • 3 Eggs
  • ½ tsp Baking Powder
  • Salt & Pepper
  • cup Coconut Flour
  • ¾ cup Cheese
  • 100 g Bacon

Cooking Instructions

  1. Preheat oven to 180°C and grease some muffin tins.
  2. In a bowl, combine grated zucchini, butter, salt and pepper. Mix well.
  3. Add eggs and baking powder and mix.
  4. Add coconut flour and combined until batter becomes thick.
  5. Fold through the cheese and bacon.
  6. Divide the mixture evenly between the muffin tin.
  7. Bake for 25 minutes or until golden brown.
