Ingredients:

  • 3 Eggs
  • 3 tbsp Cream Cheese
  • ¼ tsp Cream of Tartar
  • ¼ tsp Lite Seasoner
  • 8 tbsp Mayonnaise
  • 4 Bacon
  • 50 g Lettuce
  • 1 Tomatoes
  • 1 Avocado

Cooking Instructions

For the Cloud Bread:

  1. Preheat oven to 150° C and line a baking tray with parchment paper.
  2. In a large bowl beat three egg whites and cream of tartar until soft peaks form.
  3. In a separate large bowl, mix the cream cheese, egg yolks and salt until well combined and smooth.
  4. Gradually fold the egg whites into the cream cheese mixture with a spatula.
  5. Scoop the mixture into 8 flattened rounds on the lined baking tray.
  6. Bake for 25 minutes or until golden.

For the B.L.A.T:

  1. Fry the bacon rashers in a pan over a medium to high heat.
  2. Spread 1-2 tablespoons of mayonnaise over each cloud bread pieces.
  3. Place lettuce, tomato, avocado and fried bacon between the halves.
  4. Serve immediately.
