Ingredients:

  • 3 cup Almond Flour
  • 4 tbsp Coconut Flour
  • 1 tbsp Baking Powder
  • 1 tsp Lite Seasoner
  • 1 tsp Baking Soda
  • ¼ - ½ cup Sweetener
  • 7 tbsp Coconut Oil
  • 3 Eggs
  • ½ cup Cream
  • 2 tsp Vanilla Extract
  • 1 cup Blueberries
  • 1 Lemon

Cooking Instructions

  1. Preheat the oven to 180°C and place muffin cups into a muffin tray.
  2. In a medium bowl, combine the almond flour, coconut flour, baking powder, lite seasoner and baking soda.
  3. In another bowl, beat together the sweetener, coconut oil, eggs, cream and vanilla until well combined.
  4. Fold in the almond flour mixture, along with the blueberries and lemon.
  5. Divide the mixture between the 12 muffin cups and bake for 20-25 minutes, or until golden.
