Ingredients:

Marinade

  • 1 cup Greek Yoghurt
  • 1 tbsp Lemon Juice
  • 1 tbsp Garam Masala
  • 2 tsp Ginger
  • 3 tsp Garlic
  • 2 tsp Turmeric
  • 900 g Chicken Thighs

Butter Chicken Sauce

  • 2 tbsp Butter
  • 1 Onion
  • 1 tbsp Ginger
  • 1 tsp Garlic
  • 410 g Canned Tomatoes
  • 2 tsp Cumin
  • ½ tsp Garam Masala
  • 1 tsp Chilli Powder
  • ½ - 1 cup Coconut Cream

Cooking Instructions

  1. Cut chicken into 2-inch pieces and place in a large bowl with the marinade ingredients; lemon juice, garam masala, ginger, garlic and turmeric. Add in the yoghurt and stir to combine. Chill for 30 minutes.
  2. To make the sauce, heat a large pan over a medium heat. Add butter and fry onion and cook until translucent. Add in garlic, ginger, cumin, garam masala and chili powder.
  3. Add in tomatoes, stir until fully cooked.
  4. Add in the marinated chicken and cook for another 5 minutes. Stir in the cream and simmer until the chicken is fully cooked.
  5. Serve over a bed of cauliflower rice.
