Ingredients:

Marinade:

  • ½ cup Coconut Milk
  • 2 Garlic
  • ½ tsp Curry Powder
  • ¼ tsp Cayenne Pepper
  • Sat & Pepper
  • 2 Chicken Breast
  • 1 Spring Onion
  • 10 Skewers

Peanut Sauce:

  • ½ cup Peanut Butter
  • 2 Garlic
  • 2 tbsp Sesame Oil
  • 1 tbsp Olive Oil
  • 1 tbsp Soy Sauce
  • 1 tbsp Lemon Juice

Cooking Instructions

  1. Preheat oven to 220°C and line a large baking tray with parchment paper.
  2. Marinade the chicken: in a large bowl, combine all the marinade ingredients and mix well. Slice the chicken breasts and add them to the marinade until fully coated. Refrigerate for at least 1 hour.
  3. Cook the chicken: Thread the chicken onto the skewers. Place them on the lined baking tray and bake for 10 minutes, flip and bake for another 5 minutes or until cooked.
  4. Make the sauce: While the chicken is cooking, add all the peanut sauce ingredients in a small saucepan. Whisk over a medium heat until smooth.
  5. Transfer the chicken skewers onto a serving plate. Pour over the peanut sauce and top with sliced spring onions and a side salad.
