Ingredients:

  • 1 tbsp Olive Oil
  • 2 Celery
  • ½ Onion
  • 1 Red Chilli
  • 900 g Mince
  • 1 tbsp Chilli Powder
  • 1 Garlic
  • 1 tbsp Cumin
  • 1 tbsp Smoked Paprika
  • 2 tbsp Tomato Paste
  • 410 g Canned Tomatoes
  • ½ cup Stock/Broth
  • 3 tbsp Sour Cream
  • 1 ½ Avocado

Cooking Instructions

  1. In a large pan, heat olive oil over medium heat. Add celery and cook until softened, about 3-4 minutes. Transfer to separate bowl and set aside.
  2. In same pan, add diced onion, garlic, red chilli, mince and spices. Brown mince until cooked throughout.
  3. Lower heat to medium-low, add tomato sauce and stock/broth to cooked mince and simmer covered for 10 minutes, stirring occasionally.
  4. Add celery back to pot and stir until well-incorporated.
  5. Garnish with cheese, sour cream and avocado. Squeeze over lime and enjoy!
