Ingredients:

  • 1 ¼ cup Almond Flour
  • ¾ cup Butter
  • 3 tbsp Cream
  • 225 g Cream Cheese
  • ¾ cup Coconut
  • 1 tbsp Baking Powder

Cooking Instructions

  1. Preheat oven to 180°C and line a baking tray with parchment paper
  2. With an electric mixer, cream the butter, cream, cream cheese and sweetener until light yellow and fluffy
  3. Add the vanilla and continue to mix, scraping down the sides of the bowl with a spatula
  4. Next add the coconut flour, baking powder, salt mix till well combined
  5. Lastly, add the unsweetened desiccated coconut
  6. Mix until just combined
  7. Form 1-inch balls from the cookie dough
  8. Place the cookie dough balls on the lined baking sheet about an inch apart, and gently press down on each cookie with a fork to flatten slightly
  9. Bake for 15-18 minutes, until lightly brown around the edges. Transfer to a wire rack and let cool
