Ingredients:

  • ½ cup Butter
  • 4 tbsp Stevia Erythritol Blend
  • 2 tsp Ground Cinnamon
  • 1 tsp Vanilla Extract
  • 4 Free Range Eggs
  • 2 tsp Orange
  • 2 tbsp White Rum
  • 1 cup Walnuts
  • 1 cup Dried Cranberries

Cooking Instructions

  1. Whisk sweetener and butter well until pale and fluffy
  2. Add all extracts and spices
  3. Add in the eggs, one by one mixing between each one
  4. Add the almond flour and mix until well combined
  5. Stir through the nuts and optional extras now
  6. Line an 8 inch/20cm round baking tin with wax paper and butter the sides well so the cake won’t stick on the pan
  7. Spoon into the prepared tin and bake at 180°C/350°F for 20 minutes, or until cooked depends on your oven
