Ingredients:

  • 2 Large Eggplant
  • 2 Free-Range Eggs
  • cup Coconut Flour
  • ½ cup Parmesan Cheese
  • ½ tsp Garlic Salt
  • 1 tsp Salt and Pepper
  • ½ tsp Parsley
  • ½ cup Olive Oil

Cooking Instructions

  1. Peel the eggplant and cut into strips about 4-inch-long and ½ inch wide
  2. In a small bowl, beat the 2 eggs
  3. Combine the coconut flour, parmesan cheese, garlic salt, pepper and parsley in a shallow plate and mix well
  4. Soak the eggplant chips in the egg mixture until completely covered
  5. Transfer the egg coated eggplant to parmesan mixture and toss until coated
  6. Heat your pan on a high heat and add oil
  7. Cook small batches in the hot oil, turning once to brown both sides
  8. Pat off extra oil and serve!
