Ingredients:

  • 1 Garlic
  • ½ Onion
  • 1 Capsicum
  • 200 g Mushrooms
  • 1 cup Peas
  • Salt & Pepper
  • 2 Eggs
  • 1 Cauliflower
  • 2 tbsp Soy Sauce
  • 1 tsp Sesame Oil
  • 2 Spring Onions

Cooking Instructions

  1. To make the cauliflower rice: cut off the leaves and stems and place into a food processor. Alternatively, you can use a grater.
  2. In a large pan over medium heat, add the garlic, onions, capsicum, mushroom and peas. Sauté until the onions are translucent.
  3. Meanwhile, whisk the eggs with salt and pepper. Once the vegetables are cooked, push to one side and add the eggs and cook until just scrambled.
  4. Remove eggs and vegetables from the pan. Add cauliflower rice and cook for roughly 5 minutes. Add the eggs and vegetables back into the pan until golden.
  5. Remove from heat and stir in soy sauce, sesame oil and spring onion.
