Ingredients:

For the Brownie:

  • ½ cup Almond Flour
  • ½ cup Cocoa
  • 3 Free-Range Eggs
  • 125 g Butter
  • 100 g 90% Dark Chocolate
  • ½ cup Sweetener
  • ½ tsp Baking Powder
  • ½ tsp Baking Soda

For the Chocolate Layer:

  • 50 g 90% Dark Chocolate
  • 2 tbsp Butter
  • ¼ cup Cream

Cooking Instructions

For the brownie:

  1. Preheat oven to 175° C and line an 8x8 inch baking dish with parchment paper
  2. Break up chocolate and butter to small pieces and melt over a double boiler
  3. In a large bowl beat the eggs in the mixer
  4. Add the chocolate mix to the eggs and continue mixing
  5. Slowly add the dry ingredients until combined
  6. Spread the brownie batter into the baking dish and bake for 15-20 minutes or until cooked

For the chocolate layer:

  1. Add chocolate, butter and cream over a medium heat and stir the mixture until melted
  2. Let the mixture cool for a bit, once thickened pour over the brownie and place in the fridge until it has hardened
  3. Cut and serve
