Ingredients:

  • 110 g Butter
  • 4 tbsp Sweetener
  • 1 Free Range Egg
  • 200 g Almond Flour
  • 4 tbsp Coconut Flour
  • 2 ½ tsp Ginger
  • ½ tsp Ground Cloves
  • 4 tsp Cinnamon
  • 1 tsp Vanilla Extract

Icing (excluded from nutrition panel):

  • 4 tbsp Cream Cheese
  • 2 tbsp Butter
  • Powdered Sweetener
  • 1 tsp Vanilla Extract

Cooking Instructions

  1. Mix the butter and sweetener together in a bowl until light and fluffy
  2. Add the egg and mix well
  3. Add all the other ingredients and mix until well combined (add extra water if needed until the dough is the right consistency to be rolled out)
  4. Roll between two sheets of baking parchment, cut out gingerbread shapes using cookie cutters and place on a lined baking tray
  5. Bake at 180°C for 10-12 minutes or until cooked
