Ingredients:

  • 6 Bacon
  • ½ Red Onion
  • 3 tbsp Butter
  • 2 Tomatoes
  • 1 Spring Onion
  • 2 tbsp Parsley
  • ¾ cup Spinach
  • 6 Eggs
  • ¼ cup Parmesan Cheese

Cooking Instructions

  1. Preheat oven to 180°C and line a muffin tray with parchment paper or muffin cups.
  2. Heat the butter in a medium pan over medium-high heat and sauté the bacon and onions until translucent.
  3. Divide the cooked mixture into the muffin tray and add the diced tomato, spring onion, parsley and spinach.
  4. In a medium bowl, whisk the eggs and parmesan cheese and pour over the bacon mix.
  5. Bake for 20 minutes or until golden brown.
