Ingredients:

  • 400 g Lamb
  • 3 Courgette
  • 4 Tomatoes
  • 200 g Mushrooms
  • 2 tbsp Tomato Puree
  • 1 tbsp Turmeric
  • 1 tbsp Paprika
  • 1 tsp Chilli Powder
  • 1 Onion
  • 1 Halloumi
  • 4 handful Baby Spinach
  • Basil

Cooking Instructions

  1. Heat your oven to 220°C in grill mode.
  2. Wash your veggies and cut into small cubes. Cut lamb into 1 cm parts.
  3. Fry onion in a large pan (use a pan that can be put into a hot oven) until translucent, add lamb and mushrooms and fry for another few minutes. Add courgette and tomatoes. Add tomato paste, turmeric, chilli and smoked paprika. Combine.
  4. Simmer for 20 minutes. Add baby spinach and cut halloumi into ¼ inch slabs. Lay them on top of the dish. Put into the oven for a few minutes, until halloumi is golden on the top. Serve with fresh basil on top.
