Ingredients:

For the Base:

  • 1 ½ cup Almond Flour
  • ½ cup Butter
  • pinch Salt
  • 1 tsp Vanilla Extract
  • 1-2 tbsp Sweetener
  • 1 tbsp Lemon

For the Filling:

  • ¼ cup Sweetener
  • ¾ cup Lemon
  • 2 tbsp Lemon
  • 2 Free-Range Eggs
  • ½ cup Butter
  • 2 tbsp Gelatine

Cooking Instructions

For the crust:

  1. Preheat oven to 180° and line a 23x23cm pan with parchment paper
  2. Combine melted butter, almond flour, sweetener, vanilla, and lemon juice and zest in a bowl. Press evenly into the lined dish and bake for 15 minutes or until golden

For the filling:

  1. Over a low heat whisk the sweetener, lemon juice and lemon zest until smooth
  2. Add in the eggs and whisk continuously until the curd starts to thicken. Remove from the heat and stir in the gelatine until smooth
  3. Pour the lemon filling evenly over the cooked crust and bake at 180° for 10-15 minutes
  4. Cool completely before cutting
