Low Carb Mamon (Filipino Sponge Cake)

Ingredients:

  • 8 Free Range Eggs
  • ¼ cup Coconut Flour
  • ¼ cup Vanilla Extract
  • ½ cup Stevia Erythritol Blend
  • ½ tsp Cream of Tartar
  • ½ tsp Vanilla Extract
  • 1 tsp Vanilla Liquid Stevia
  • 1 tbsp Lemon
  • ½ tsp Baking Soda
  • ½ tsp Salt
  • 4 tbsp Butter
  • Cheddar Cheese

Cooking Instructions

  1. Grease an 8-inch spring form pan with coconut oil and preheat oven to 350°F
  2. Place your egg whites and cream of tartar in a stand mixer and mix (in high speed until stiff peaks form. Set aside
  3. Put in your yolks in another bowl and whisk with vanilla extract, liquid stevia and lemon zest
  4. In another bowl combine all the remaining dry ingredients
  5. Mix the yolks and dry ingredients together until smooth
  6. In small parts, one at a time, fold in the egg whites into the yolk and flour mixture, do not to over mix so you will not deflate your egg whites
  7. Slowly drizzle your cooled melted butter
  8. Pour batter into pan and bake 30 minutes or until golden on top and until the cake tester comes out clean
  9. You may top it with shredded cheddar cheese
