Ingredients:

  • 4 Portobello Mushrooms
  • 1 ½ tbsp Olive Oil
  • 1 ½ tsp Garlic
  • 4 tsp Italian Herbs
  • ½ cup Pizza Sauce
  • 1 cup Mozzarella Cheese
  • 12 Pepperoni
  • 4 Cherry Tomatoes
  • Salt & Pepper

Cooking Instructions

  1. Arrange oven shelf to the middle of your oven. Preheat oven on grill settings on high.
  2. Combine the oil, garlic and 4 teaspoons of the herbs together into a small bowl. Brush the bottoms of each mushroom with the garlic oil mixture and place each mushroom - oil side down - on a lightly greased baking sheet.
  3. Fill each mushroom with 2 tablespoons of the pizza sauce per cap, ¼ cup of mozzarella cheese, pepperoni slices and tomato slices. Grill until cheese has melted and is golden in colour (about 8 minutes).
  4. To serve, sprinkle with the remaining italian herbs (or mixed herbs), and season with salt and pepper to taste.
