Ingredients:

  • 4 Eggs
  • 180 g Cream Cheese
  • Salt & Pepper
  • 1 ½ tsp Psyllium Husk
  • 1 tbsp Coconut Flour

Filling:

  • 1 Capsicum
  • ½ Onion
  • ½ Garlic
  • ½ tsp Chilli Powder
  • 90 g Mozzarella Cheese
  • 90 g Cheese
  • Sour Cream
  • Avocado

Cooking Instructions

  1. Beat eggs and egg whites until fluffy. Add cream cheese and continue to beat until smooth.
  2. In a bowl, mix salt, pepper, psyllium husk and coconut flour.
  3. Add the flour mixture to the egg mixture, bit by bit while beating. Let the mixture sit for 5 minutes. It should thicken to be like a pancake batter.
  4. Spoon the mixture into a non-stick pan over medium heat, fry until bubbling, flip and repeat until golden.
  5. In another pan, over high heat, add capsicum, onion, chopped garlic clove and seasoning. Cook until soft.
  6. Place one tortilla in a hot pan, sprinkle with cheese and vegetable mix. Top with another tortilla. Fry each quesadilla for about 1 minute each side or until cheese has melted.
  7. Serve with avocado and sour cream.
