Ingredients:

Rice:

  • 500 g Cauliflower
  • 100 g Cream Cheese
  • 1 ½ tbsp Rice Vinegar
  • Salt & Pepper
  • 1 ½ tbsp Soy Sauce
  • 4 Sheets Nori

Sliced Vegetable Options:

  • Avocado
  • Cucumber
  • Capsicum
  • Asparagus

Protein Options:

  • Eggs
  • Chicken
  • Salmon
  • Tuna
  • Crab Meat
  • Shrimps
  • Prawns

Cooking Instructions

  1. Place the raw cauliflower chunks into your food processor with the blade attachment.
  2. Blitz until it is a rice constancy.
  3. Place the riced cauliflower in a closed container and cook in the microwave for three minutes.
  4. Once cooled, add the cream cheese, vinegar, salt and pepper. Blitz or stir until thoroughly mixed. You don't want any visible chunks of cream cheese or cauliflower, but you don't want a puree either
  5. Spread the cream cheese cauliflower rice mixture along the nori sheet, leaving 2 inches of the nori sheet bare
  6. Place your selection of vegetables, avocado, egg and fish along the centre. Dampen the bare edge of the nori sheet then roll up tightly
  7. Repeat with the remaining nori sheets and fillings. Slice with a sharp wet knife.
  8. Serve with wasabi, soy sauce or coconut aminos.
