Ingredients:

  • 6 Zucchini
  • 1 tbsp Olive Oil
  • 6 Button Mushrooms
  • 2 tsp Smoked Paprika
  • 1 ½ tsp Chili Powder
  • 60 g Mozzarella Cheese
  • 60 g Cheddar Cheese
  • 3 tbsp Sour Cream
  • 2 tbsp Spring Onion

Cooking Instructions

  1. Preheat your oven to 190°C and line a baking dish with parchment paper.
  2. Cut the zucchini in half, lengthwise. Using a large metal spoon, scoop out the seeds from the insides.
  3. Transfer the zucchini to your baking dish along with the diced mushrooms. Cover with olive oil, chilli powder and smoked paprika and roast for 10 minutes or until golden.
  4. Remove from the oven and place the mushrooms inside the zucchini with mozzarella and cheddar cheese.
  5. Bake for another 5-10 minutes or until the cheese has melted.
  6. Serve with sour cream, spring onion and a salad.
