Ingredients:

  • 2 Zucchini
  • 1 ½ Garlic
  • 4 tbsp Olive Oil
  • 50 g Baby Spinach
  • Salt & Pepper
  • ½ cup Button Mushrooms
  • ¼ cup Parmesan Cheese
  • 220 g Cow Feta
  • 2 tbsp Marinara Sauce

Cooking Instructions

  1. Preheat oven to 190°C and line a baking tray with parchment paper.
  2. Slice the zucchini in half length-wise and with a spoon scrape out the insides (don’t throw it away) and place the zucchini boats in the baking tray.
  3. In a medium pan, fry the chopped garlic in half of the olive oil over medium heat until golden. Add baby spinach, mushrooms and the remaining zucchini insides, fry until soft and season with salt and pepper.
  4. Spread the marinara sauce evenly over the zucchini boats then divide the spinach mix between the boats and add the cheese on top.
  5. Bake for 20 minutes or until tender.
  6. Drizzle the zucchini boats with the remaining olive oil and serve with side salad.
